This was my first thought after reading the OP! Winds of War was so great and the sequel War and Remembrance was just as good! I read both many years ago and I have listened to the audio versions as well, each time I get more out of them. Highly recommend.
NP. Count me in as another fan of The Winds of War, War and Remembrance. Both were very engrossing page turners. Similar to Pachinko.

OP, sometimes I read a young adult book to just shake out of a slump. A couple of authors that write easy but not trashy YA books are Laurie Halse Anderson, Jenny Han, Rainbow Rowell.
Some other "easy" fiction: Elin Hilderbrand, Taylor Jenkins Reid

I don't read literary fiction so if that's what you want ignore me.
John Sandford writes a couple of entertaining, well written series with the characters Lucas Davenport and Virgil Flowers. Later books might be a bit better than earlier but if you start at the beginning you know the backstories and relationships. Warning that there are some truly bad guys that might be difficult or triggering for some readers.
For fluff, I listen the audiobooks of the Cruise Ship Cozy Mysteries series by Hope Callaghan featuring Millie Sanders as an older character who takes a job on a cruise ship and solves mysteries. Another cruise ship series is the Rachel Prince Mysteries by Dawn Brookes. Rachel is a younger character but also solves mysteries on cruise ships. Both are easy listening.
