I had a neighbor who made homemade manicotti on Christmas. It was amazing. They weren’t vegetarian but this dish was meatless.


Yes - Shepherd’s Pie and stuffed shells are both great ideas. Thank you.
I was thinking some veggie version of gumbo might be fun (if that even exists).

Usually leftovers from Christmas Eve. I tried to even just do a lasagna on Christmas, and no one really wanted to eat. We all tend to stay in pajamas all day on Christmas, and we use Christmas Day as downtime and cleaning up present craziness.

Christmas Day: I’m taking my first stab at my family/culture’s traditional Christmas meat, pernil (slow-roasted, heavily seasoned pork shoulder). Sweet potato casserole, slow cooker mac and cheese, and an arugula and pomegranate salad with a balsamic-honey dressing (these are not traditional sides). And Pinot noir!

I’ve done lasagna in the past. Vegetarian shepherd’s pie (with mushrooms, impossible meat, or some combination thereof) could also work.
