We do something similar. TJ's chocolate croissants (you leave them out to rise over night) and then bake first thing. While those bake we open presents and drink coffee. Then we take a break to eat the croissants. More presents or playing for a bit. Roughly 2-3 hours after we've gotten up, we make some eggs and a breakfast meat and some fruit. The sugar has normally worn off a bit and everyone needs some protein.
So I guess that's 2 breakfasts, but we eat it in shifts.
I will agree with the PP that french toast casserole is almost always terrible. Just make cinnamon rolls or similar.
