Lots of good seasoning suggestions here. My suggestion would be to add a high temperature step. I alwasys have good luck browning chicken breasts in a pan first before putting straight in the oven. Just use an oven proof pan. Maybe a minute or so on both sides in a hot pan with oil, then into the 400 degree oven till done (5-6 min - depends on how thick). The browning will add a lot of flavor and texture that roasting alone won't.
