I priced out flying to Colorado for a 2 week vacation with budget/lower mid-range 7k sans gas+activities
I've priced out some different options in Europe to see what's most affordable and appealing to my family. I ruled out London, because prices are super high in the summer and ruled out Copenhagen (I'm headed there already).
I'll share what I priced out for my family of 4 (2 adults, 2 elem. kids)...all my estimates are costs without gas/activities/souvenirs
1) Fly in/out Prague and some combo of Prague, vienna, budapest, Ljubljana+region, zagreb. $4,800
2) Fly in/out Venice with only 2 nights Venice and the rest likely around the Dolomites $5,500
3) Fly in/out Porto and stay in Aveiro+Cascais $5,700
4)Fly in/out Paris and visit some combo of Alsace+black forest or switzerland (lots of youth hostels that are actually super reasonably priced as low as 107-167 per night depending on which one with breakfast) 6k
I also saw "affordable" priced tickets to Dublin, Berlin, Stockholm, Hamburg (all at or under $700 pp with very scattered dates. My family trips I priced out are all for July so maybe you could do it a little cheaper in June?

Londoner here. You do not want to visit the beaches of Spain in the summer. They are full of the worst behaved louts from the UK you will ever encounter outside of a football (soccer) stadium.
