It sounds like his security didn’t stop to look or attempt to recognize her but was simply immediately stopping inappropriate touching. Which it was. Doesn’t matter who she is, this was not appropriate and security did its job.
No they didn’t. Assaulting someone is not an appropriate response.
It wasn’t an assault.
1. People tap people on the shoulders (or back or whatever) all the time.
2. She was backhanded hard enough that her glasses were knocked off and she fell. This was corroborated in one of the witness reports.
3. His security later came to the table, claiming to try to apologize.
4. At that point her security walked off to talk to his security.
5. After that, police were contacted.
It sound to me like his security escalated the situation not once but twice. But I am sure we will find out more definitively soon.
