Each Peach grocery in Mt Pleasant has a sandwich with artichokes, roasted red pepper, mozzarella, and vinaigrette on a baguette. It's really good.

Toasted baguette, goat cheese and fresh figs (could replace with fig jam.)

Or, baguette, cheddar and fig jam.

Peanut butter and banana, avocado and smashed chick peas, cucumber and cream cheese.

This veggie pan bagnat involves some work, but the filling can be refrigerated for a few days.

My current obsession is the Trader Joe's pickle flavored falafel in a wrap with hummus and some crisp cucumber slices and tomato.

Also, BLT with veggie bacon
green apple slices, havarti, fig spread on a hearty toasted bread
Sunbutter and honey
Roasted portobello, red pepper, and goat cheese on focaccia

My sister used to make a brie and pear sandwich on sourdough. SO GOOD.
