My HYPSM kid is getting a new computer for a graduation gift. She's not into ostentatious jewelry or anything other displays of wealth for that matter.
Her computer will cost $3K, so I'm spending the same amount of money as OP on her gift.

I have a string of pearls I thought were timeless. I used to wear them almost daily. But I haven't worn them in a decade, because they aren't in style. Hopefully they will come back at some point. Not sure anything is truly timeless so might as well go for what her age group likes. I personally like the VCA stuff.
Timeless is by definition never in or out of style.
OP, you really seem to want to buy your daughter this, and you know her better than we do. So why not just get it for her? If you don't want to get her something you think she'll stop wearing, I'm not sure there's any jewelry you can pick that is safe. Years ago I'd have said a Tank watch, but lots of people don't wear watches at all. I'm assuming she already has the classic earrings, so . . . .
