Gentile here. I always thought it was an endearing slang term. Never had a reason to search shiksa meaning. This is derogatory, but made me laugh because I wasn't expecting it.

The etymology of the word shiksa is partly derived from the Hebrew term שקץ shekets, meaning "abomination", "impure," or "object of loathing", depending on the translator. Several dictionaries define shiksa as a disparaging and offensive term applied to a non-Jewish girl or woman.

I find it odd too but may be it’s her way to show acceptance of the kid as family.

No large group of people thinks in a monolithic way. Half of the people are only attached to their religions as lineage or culture. I see that in people of all faiths, no matter Jewish, Mormon, Muslim, Hindu etc.

Just one example of Christian-Jewish marriage is White House as Biden’s kids, Trump, Obama, Bush, Clinton’s daughters and probably 50% or more of other first kids are married to Jewish spouses.

Jewish mother here - this is not common. Non-Orthodox Jews don't place this kind of restrictions on their kids in 2021.
