This is because all acadamies want is players that can compete at a professional level at as young of an age as possible. With college recruiting all players are looking to do is stand out from other players their grade in school. This is why parents hold their kid back 1-2 years in school. They can be 36 months older than everyone else their grade. Since parents pay for Club soccer nobody wants older players playing down on their kids team.
Then why do all the top European academies have biobanding which produces world class players like Kevin De Bruyne, Declan Rice, Harry Kane etc if it doesn't work and is a bad thing?

However if puberty hits and they suddenly grow 8 inches Acadamies will play that player up ASAP so they can be considered for playing pro. This is the differnce. In a non Academy setting if a player is able to play down they'll stay playing down so they can dominate and look amazing for Scouts that are looking for players that graduate a specific year.

What I don't understand is the parents that think they'll have a choice in which team they'll be playing on. Top A team coaches have multiple players they can choose from for every position. Why would coaches choose a grade older player when they know they'd be a short-timer and guaranteed to eventually leave the team to play on a team thats their grade for recruiting? Some people will say that they're better than the other players that are a grade down. If this is true why didnt they make the A team thats their grade in school? It doesnt make sense.
