This is not legally accurate at all. However, the reality is that the Trump DOJ will never prosecute anyone. And Trump will try to preemptively pardon everyone. And that raises the question of whether accepting that federal pardon will open up risk to state prosecution. In any event, it will be 3 years before these questions are answered.

Yes, assaulting, resisting, or obstructing ICE officers during their duties is a federal felony (18 U.S.C. § 111), and DOJ can prosecute state officials or others for serious interference.
But no, ICE officers do not have blanket "federal immunity." They have qualified immunity in civil suits and Supremacy Clause protection against state interference, but they can still be prosecuted (federal or sometimes state) if they act unlawfully.

That’s categorically not true. No person working for the federal government has immunity. This is the United States and public servants are accountable to the people they serve. That includes ICE and everyone else at DHS.
