Experts are still people at the end of the day. They have biases, blindspots, and many are not nearly as intelligent as you might hope. Many are simply closed off to new information, hence the quote: "A new scientific truth does not triumph by convincing its opponents and making them see the light, but rather because its opponents eventually die and a new generation grows up that is familiar with it ..."
Then you have to factor in institutional capture and self interest...
Experts haven't exactly been covering themselves in glory of late. Why should we defer to them when its so easy to poke holes in their orthodoxy?

Except they actually aren’t that expensive. Ground beef is maybe $5 per pound on average. A dozen eggs are conservatively $4 a dozen. Butter is cheap. A pound of ground beef, 4 eggs, 4 tablespoons of butter gets you 1700 “calories” (which are a stupid measure of energy) per day at a daily cost of under $7.50 per day, which is $225 per person ina. 30-day month.
