While you are correct, he probably IS eating a lot more protein than he was before b/c the carbs that he likely used to eat are gone (or minimal). So, while the diet is moderate protein, it's still likely more than before, which is probably why that comment was made.
Doesn't matter what he did before or after or why he's eating meat. If he's consuming a lot of meat (to the point that OP noticed), her husband is probably not on a keto diet. But that's beside the point; he changes his diet and he's probably being obnoxious about its merits. I don't think he suddenly got dirtier.
