While we're talking about the Maniacs, they also do nice covers of:

Peace Train (Cat Stevens)
Everyday is like Sunday (Morrissey)
Don't go back Rockville (REM)
Hello in There (John Prine)

Also, it's not a cover, but Natalie Merchant takes a verse in "In Your Eyes" along with Gloria Estafan and Joan Osborne and it's just a magnificent performance all around (from VH1 Honors). The height differences between Natalie and Joan especially make the video worth watching.

Not necessarily better than the originals, but Rhiannon Giddens's covers of Don't Let It Trouble Your Mind and She's Got You are pretty great.
