Your kids are really young to be in school/daycare all day then go home and rush off to more classes. You may be type A, but why are you making your kids go through all of this? It is a lot of stress on them...think about how they feel if this makes you feel burned out!
I am a FT working mom and my kids are in 1st and 3rd grades. If we have more than one evening of activities a week I lose my shit, got no time for that. Swimming is a priority for safety reasons, but they will learn in summer camp or, if necessary, find a weekend class. Your family deserves downtime after a long day at work/school. Best gift to give them.
