You clearly haven't eaten widely in India if you think there are only 3-4 spices. Eating the hamburgers and the Delhi Marriott buffet does not count as Indian food.
I knpw, right? I cook a lot pf Indian food and regularly use about 10 different spices and definitly not all hot because i have kids. Cumin, corriander, anise, cardamom, tumeric, garam masala, cloves, black pepper, hot red pepper, ginger, mustard seed, saffron, and tamarind. Im bot eve getting i to the herbs and variety of basils.
