I think you could eat it in the car if the egg was cooked firm, not runny.
Pop two pieces of bread into the toaster to lightly toast, spray a pan with nonstick, cook the egg flipping it to make sure that the yolk is not too runny, put a little butter on the toast, put the egg on one piece of toast, top with cheese, cover with the other piece of toast, cut in two...put on a paper plate and eat in the car.

Whole grains have lots of really good available protein. It doesn't all have to come from an animal. and kids need carbohydrates. They shouldn't be running around on Atkins diet. 14 grams of protein and 30 grams of carbs seems like a fine balance for a child

I eat overnight oats every morning for breakfast, I do mine in a mason jar. They are very filling and keep you full. I do oats/chia seeds/ vanilla extract/vanilla greek yogurt/unsweetned plain almond milk or sometimes vanilla almond milk. I'd skip the yogurt if you plan to warm them before eating, use more milk instead. I eat mine cold.
