Since both Margo and Margot are equally legit alternative spellings, I would go with the spelling that minimizes the chance for mispronunciation and confusion. My name is an alternate spelling of a common name, by one extra letter, and man do people botch it. Not annoying, but I wish I just had the standard spelling.
Regarding Margaux, this is the history from nameberry.com: "This spelling was popularized by supermodel, actress, and tragic Hemingway granddaughter Margaux, whose name spelling came courtesy of a bottle of French wine. (The original spelling of her name was Margot; she changed it when she heard her parents were drinking a bottle of Chateau Margaux the night she was conceived.)" I wouldn't choose the spelling that a flaky, drug addicted supermodel made up for herself based on the wine her parents were drinking when she was conceived. Blech.
