Do another cousin vacation, but low key. You won't kill yourself with logistics and kids will still have fun together. Rent a beach house together, go to Hershey together, etc. Save Disney just for your own family.

I let go of it. i had been advocating for the week her family is now going since the beginning since it is cheaper and easier. i did hang on until i realized i couldn't get any of the dining reservations i wanted/had and won't be able to possibly get approval from my boss until she comes back sometime next week. it just wasn't worth the stress anymore. i am definitely disappointed.

Admit it you've never really liked this cousin, have you?
the original hotel was nicer, although a bit more expensive. some folks dropped out initially because of price, that kind of screwed with some sleeping arrangements and led to more people dropping out. i actually really like this cousin and want to do vacation with her family, she is more like a sister to me.
but alas, i have now cancelled the trip for my family, she is now only going with hers.

Reach out to everyone. "It seems like the Disney trip is just too much for many of us working around timing, work, finances and such. My interest in the trip was simply to spend time together. What do you say we regroup and talk about something that might fit everyone? Is there someplace closer and more affordable that interests everyone? Then we can look at timing."
