The thing is, even if you aren't particularly observant - having mandatory/important work going on during the holiday is not very kosher. Sort of like holding an all-hands meeting the morning of Christmas Eve - you technically CAN, it's just not very thoughtful

So, even if your colleagues are "around", say on that 2nd day even, they will appreciate not having to worry about managing their calendar on that day

It would not be good. You also have to have time to prep the large meal that everyone needs to eat before sundown.

I would expect very few Jews to attend that, just as very few Christians would attend an out of town meeting that ended at noonon Christmas Eve.
