Religious practices need to be prptected as well, especially for sole proprietorships and small family businesses.
But what does religion have to do with business? Religion is a private thing you can do in your own home. No place in the business world.
Sole.proprietorships and small family businesses are individuals and should be allowed to practice their faith as they see fit, including in their business dealings, without government interference.

And those who are 'in between' gender can have a separate unisex bathroom to choose from. Multi stall bathrooms should still be labeled by gender.
