Vincenzo, nn Enzo, and Edoardo, nn Edo are great. Alessandro,nn Ale or Sandro would be easy for Americans to pronounce.

Same PP - I've seen Ciro, Mattia, and Marco too on FB (family in Italy). Our family had a Mattias I think, but not Mattia. I know in NYC Dominic is like the #1 name now, but I haven't seen any family or friends of friends on FB with that name in Italy. Looks like Marco is the most popular.

Italian names in my family:
Domenico (goes by Domenic or Dom)
Salvatore
Addolorato (goes by Danny)
Giacomo (goes by Jimmy)
Giuseppe
Laurino (goes by Larry)
Francesco (goes by Frank)
Nicola (goes by Nick)
Giovanni
Paolo
Antonio

Most of these are older relatives who were born in Italy in the 40's-50's or earlier and then moved to the US, hence the old man American nicknames.
