I makes omelettes with one whole egg and three egg whites. I add some shredded Colby jack cheese and it's delish! Not nonfat but very tasty and healthy. I don't notice much difference in cutting out most of the yolks, but a bit of cheese really amps up the flavor.

Fresh Chives. Mix them into the egg mixture. Really makes a big difference with little effort.

Tiny little cubes of cream cheese, chives, thinly sliced and diced red pepper and little floret pieces of broccoli (literally, the tippy top crumbs of the broccoli). OH AND THE YOLKS, even just half of one.

It doesn't take very much of it to add some flavor. A little chorizo goes a long way.
Moderation, not asceticism, is the key.
People think nothing of adding cheese. A little turkey sausage will give you more protein and less fat than the cheese will. And if you add the turkey sausage, leave the cheese out.

She didn't. She asked for veggie and spice options and to keep it lean. So one can do a lower calorie pesto, e.g.:

Cheese is yummy in an omelette and if the OP wants to keep it on the lower calorie side, she can add less and still get some good flavor.
