Or you can take the stuffing out when the turkey is at 165 degrees, put the stuffing in dish and pop it back in the oven until it reaches 165 too.

You're not supposed to because it dries your turkey out. All that juice and flavor that gets into the stuffing should stay in the bird. Add the ground up giblets to the stuffing for flavor.

DH lives for stuffing--doesn't even really like turkey. So yes, for us it'll be the main attraction.

I remember Alton Brown/Good Eats doing a version where you wrap the stuffing in cheesecloth, so that you can pull it out and put it in a dish then bake it to safe temp when the bird is done.


I really think that is only an issue if you stuff a partially frozen bird. if your bird is properly thawed and you adjust time for stuffing you should be A-OK.
