Last night we had short ribs over creamy polenta. Today we are having fettuccine Alfredo. Tomorrow homemade fish sticks and tartar sauce.

Just pulled pumpkin banana muffins out of the oven. Dinner tonight will just be for myself and 2yo son who is getting over a stomach bug and hasn't eaten much in the past 48 hours. So I'll probably eat muffins for dinner. He will too, actually, unless I can get him to eat some cereal or something.

Not PP but my favorite is the Skillet Cornbread recipe by Pioneer Woman. It's crumbly and corn-y, and I add about 1/4 cup of sugar to make it slightly sweet.

Grilled a marinated beef shoulder from Wegmans and had it with sweet potatoes, spaghetti squash and a caprese salad. Slightly weird combo of stuff, but except for the beef I was trying to use up things in the house and make things that would translate into good lunch/dinner leftovers for me and toddler DS this week.

Enchilada pp here. How did the pumpkin turn out? Mine was great despite Dhs initial grumbles of no meat.


Pumpkin pasta was also great. I'd made it before. I rarely miss with the recipes on Skinny Taste. One of my favorite websites!
