2 Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown. Test with a fork for desired doneness. Fork tines should be able to easily pierce the cauliflower. Remove from oven and sprinkle generously with Parmesan cheese. Serve immediately.

I do something like this, but add chives. We also like adding goddess dressing to roasted cauliflower.

Just made this last night. Absolutely delicious! More suited for a Spring/Summer time salad, but for cauliflower this good, I will eat it year round like this:

Steam or roast florets and then mix it with peas and Asian chili sauce. Yum!

You can make a puree by steaming it and using an immersion blender to break up. Mix in 2 tbsp. each of butter and cream cheese. I put mine on top of a cottage pie last night.

Turn it into a substitute for rice by processing florets in the food processor until it is "riced". Saute a chopped onion in oil on med-hi until it is translucent, then add in "rice" and cook for 7 min. until tender. Season with S&P.

I've started making quinoa cauliflower "meatless balls" (sounds gross now that I write out meatless balls) for my 1 year old. Cooked quinoa, mashed steamed cauliflower, pesto, cheese (if the cauliflower is warm when you mash it, you might be able to skip this step) - zap it for a minute or two to melt the cheese and shape in to balls the appropriate size for your child.

He loves them.

and then he smells like pesto, so bonus!

Buffalo cauliflower is good, too (roast it and then add spices, dip in blue cheese if you like).

Kitchen Treaty has a crock pot cauliflower chili recipe that I always mean to make but haven't yet. looks good though

You can make mashed cauliflower just like mashed potatoes. Just use an immersion blender to purée.

Squirt brown mustard on it and roast it. Very good and healthy.

I steam cauliflower til very, very soft. Make thick mashed potatoes and mash cauliflower in. Mix well. Add some butter, salt, milk. Great way to get cauliflower into your diet in a yummy way.
