OP here. My wife is very bossy and would walk all over me if I let her. So some of that was probably what had me on edge.

You are not a natural leader and your wife is, and you both know that. That's why you guys are having problems. Switch partners.

You should ask the instructor to switch partners. Even if your wife is managing the steps better than you, her taking the lead doesn't make for good salsa dancing. You need to learn to lead well and she needs to learn to follow. She wouldn't pull that crap with someone else. You are better off partnering with other people.

I've been salsa dancing my whole life. If a woman is competent, she can dance with anybody, even a weak lead, without making him feel like a fool. On the other hand a weak lead shouldn't get too upset if his partner occasionally and subtly hints a lead. But a woman can do that without taking over completely. Good partner dancing is really a conversation and the man leading needs to be able to be responsive and a bit adaptable too.

Sorry. I disagree with the women who think you should be twirled and publicly so. I'd rather never dance again than be treated as "the woman" in a particular style of dance.

I hate, hate, hate learning to dance when the man is a weak lead. It's disorienting and I'm completely unable to focus on learning the basics myself. My DH thinks I don't like dancing. Truth is, he's terrible and I don't want to hurt his feelings. And, I don't want to turn something romantic and fun into a fight. Dancing is fraught and I'm not surprised spouses bicker about it. You're taking risks and getting out of your comfort done in public. Not surprising each person would want to fe in control. It's natural. You and your wife should realize you're not one in this and have a good laugh.
