Cauliflower rice has become my go-to base for SO MANY meals lately. I use it instead or rice or pasta with turkey taco meat, grilled chicken or chicken stir-fry and even with eggs.

Here's the basic version (I use my Vitamix rather than a food processor to chop the cauliflower into "rice" in no time!):

Here's a "fried rice" variation:

+1

For dessert, I like date, nut, and coconut balls and Mark Sisson has a nice paleo pumpkin pie recipe with a walnut crust, really yummy!

For entrees, I like taco salad, rotisserie chicken with roasted squash, steak with a spinach strawberry and goat cheese salad, and any Indian curry - sub rice with grilled eggplant if it's a tomato base curry and squash if it's coconut milk based

For appetizers, carrot ginger soup is my fav

For drinks, you can do a lassi really easily at home

If he wants to maintain and be healthy, the white stuff (sugar, white flour) has to go. Some people are just more sensitive to carbs and it fuels their appetite. My DH is always going to love birthday cake and the occasional dessert out, but those are hopefully going to be once in a while treats and not daily occurrences.

Well, personally, I find that if I have no whole grains in a meal, I end up eating too much. The best thing for me to eat to fill me up and keep me from over-eating is high fiber foods.

If I don't have any fiber -- either via whole grain breads or through things like beans and brown rice -- I end up eating a LOT of dense protein foods, and that ends up putting weight on me.

But sure, maybe that's an individual thing. I also don't buy the "protein fills you up" stuff that people say. The thing that fills me up is fiber. It also satisfied me. And it keeps me regular.

I don't deal well with raw veggies (they trigger IBS-C). So the best fiber for me is either whole grains or cooked beans.

Yes! Thank you so much for articulating this. I am the same way. "Protein" does not fill me up in the slightest. I'm just as starving after a snack of almonds or an egg or some cheese as I am with "useless carbs". Give me a bowl of whole grain fibery cereal anyday as a satisfying snack. That's what works for me too. I weigh 108 by the way.

I made bruschetta stuffed mushrooms the other night, and they were a hit! I served them with grilled steak and Parmesan cauliflower.

Check out the Well Fed paleo cookbook. It's on amazon prime if you want to check it out on a kindle first.

Her website is theclothesmakethegirl.com--good recipe there too.

^^^ I was not 14:52 who posted that recipe. I've tried both and I think without cheese, mashed cauliflower is hard to eat.

This is not true. You need whole grains in the diet. Please tell us all where you got your nutrition degree. This, I can't wait to hear.

There is no physiological need for humans to eat whole grains.

You do not need a degree in nutrition to know this!

Name one thing of nutritional significance that is ONLY found in whole grains, and nowhere else in the plant or animal kingdom.
