My parents didn't have a lot of money and so travel was limited. I have two kids. One can and will sleep anywhere. The baby is a very sensitive sleeper and it's just not going to be a good vacation if we all sleep in the same room. Hopefully as he gets older that will change (he is one) but for now we can afford to do the extra room and make it a relaxing vacation.
+1. We didn't have the money for hotel vacations growing up. When DH and I started to vacation with DD1, she could sleep anywhere and through anything. Now with DD2, she actually wakes in a separate room when she hears the floorboards creak. We've tried getting her used to noise, as I don't believe in everyone being silent for the baby, but it's almost two years of her waking with loud coughing, voices, etc. So yes, she needs a separate room.
