I also liked the first three Robin Hobb trilogies, even though the characters are a little self-indulgently sad; I don't recommend the Soldier Son trilogy.
I like and admire the Malazan series by Steven Erikson and the Prince of Nothing trilogy by R. Scott Bakker. In both cases, really interesting, well-written, and "different" -- but violent. I've taken a break from both because I find the violence / emotional wrenching too exhausting, in a "I can't stop reading but I feel kind of sick" way. Same for the more cheerful First Law trilogy and sequels by Joe Abercrombie.
Paolo Bacigalupi does a bunch of short stories and a couple novels set in the same dystopian future; I've only read The Windup Girl but the others look interesting too.
