Just so you understand your son will be in the minority and that the great majority of those who attend are from Catholic families that are actively practicing the religion. Mass is required. As will the parents that you meet.
The Prep boys largely hang out with or date girls from the Catholic girls schools.
There are probably other schools that are a better "fit".
I grew up going to public and most guys from my school wanted to date girls from Catholic schools too. There is a reason for that....

It's true that non-Catholics are a minority at Prep. It is not true that the great majority of Prep families are actively practicing (attending mass at least once a week). To the contrary, Prep is considered "catholic lite" by some more devout Catholics.
Holton is the only single gender non-Catholic high school in MoCo, so every private boys school boy interacts with girls from the Catholic girls schools a lot. Plenty of non-Catholics at those schools too.

Jewish athletes? Really?

Being a non Catholic is not an issue. He likes the religion class and going to Mass. You should visit the school and make up your own mind. What I like the best about it is how relaxed the boys seem. I think it is certainly academic enough to get well prepared for college, but minus the angst at some other schools.
There have always been a few non-Catholics at Prep who aren't AAs or boarders from Asia.
Seems a strange choice with so many other alternatives where the boys don't have to attend the religious services of a church other than their own.
Most boys like to fit in with their peers. Filing up to the altar at Mass and refusing the host is not fitting in.
