Subject: What am I doing wrong with my beef stews?
I think the key is cooking really low, for a really long time. Like at 200 degrees in the oven for 6 hours. Yum.

Use bottom round chuck. Season and brown all side. I put my meat in a roasting pan, cover with liquid, and cook in the oven until it falls apart ( about 2 hours). Then I put the meat, veggies, and gravy in a pot and let it simmer for an hour or so.
