wash. leave wet. wrap in aluminum foil (add a little butter inside wrapper if you are not anti-butter). Roast for 1 hour. works for sweets too and it's hard to OVER cook these...under very possible.

Most toaster ovens come with a baking sheet with raised edges (aka jelly roll pan). You can also buy them. DH puts some things right on the rack, but I hate doing that.
