OP here! Who the FUCK are you to tell me to shut up? I ask, and bring it up because I'm concerned for my niece. I love her. She's family. I would do anything to protect her from harm - whether it's from other or the harm she does to her self.

OP, not sure what to advise you about your niece but I understand your concern.
Check out the "fat" threads on the Off Topic forum for the degree of bias and hostility directed at fat/obese people. Anything you can do to help her would save her a lot of grief down the line quite apart from health issues.
I had the same situation with a niece. She was pretty but her fat figure just obscured it completely. One day, we were browsing the web and inadvertently checked out a link showing "before" and "after" pictures of people who had lost a lot of weight and the difference was striking and she kept saying "wow". I told her if she lost some weight she would be beautiful. She took it to heart and began to work out and eat healthy. Lost quite a bit of weight and she is absolutely gorgeous and everyone tells her how attractive she looks. She has kept it off for over five years.
So, this worked for her but it was nothing planned.

OP -- how does your niece and her family eat at their home? If they are always eating fast food, convenience food etc. then the role you can take on is introducing your niece to fruits and veggies and healthier dishes when she’s over at your home. It is quite possible that she doesn’t realize that she likes broccoli or spinach or whatever because she’s never been forced to try it.
If, however, they’re eating relatively healthy at home, then I would let it go because then it would seem to me that the parents realize that there is an issue and are doing what they think they should -- they don’t need your two cents.
It seemed like the parents stayed over too -- were they around when you and your DH tried to talk to their DC about healthy eating or were they there for Supersize Me? Did they say anything? Did they seem irritate or raise eyebrows in any way?
