Sure, but there's not a real recipe, more of a list of things we put in and rough amounts.
I put one or two big eggplants on the grill (usually while I'm cooking something else) and let them char, rotating every once in awhile. The skins can burn, no problem. When they are really soft and kind of juicing (maybe 10 -20 min on the grill), I bring them inside and let them cool. Scoop out the eggplant and toss the burnt skins. To this I add: juice of 1 lemon, pinch of salt, couple big spoonfuls of tahini, 1 or 2 crushed garlic cloves and sometimes some raw onion, chopped fine. Smoosh the big pieces of eggplant with a fork and mix thoroughly. I'd then taste and see if it needs anything (more lemon or salt are the usuals).
To serve for company I put in a shallow bowl, drizzle with olive oil and pomegranate seeds.
The reason it's so easy is that I'm usually grilling something else so this isn't really taking extra time. Sometimes I'll char the eggplant and then put it whole in the fridge for a day or two until we want to make it. The rest of the ingredients are staples in my house so it's just throwing them together real quick. Hope you like it!
