Chickpeas and lentils are the healthiest legumes, to my thinking. They are low in phytic acid, which is present in all grains, beans, and nuts, and chelates needed minerals from our bodies. Soak all these foods for at least 12 hours prior to cooking, to reduce the phytic acid content.
I am a big home cook these days. My meals are tasty, but compared to what people are suggesting here, pretty boring. Like we often have beans that are just dried beans, soaked and then cooked with water and salt - served with rice, cheese, and home made hot sauce. But my whole family enjoys what I put on the table. Key is to make sure there is enough fat (butter, olive oil, coconut oil, cheese, sour cream, bacon, or ghee) and salt included.
