If you're feeling particularly virtuous, Martha Stewart has a homemade pudding recipe for her frozen pops. I looked at it and it takes awhile- scalding milk, etc for the custard, cooling appropriately, then freezing. Also looked delicious & you control the crap factor. But I think the whole point of a Jello pudding pop is that they are quick and easy, and were filled with junk when we were kids. If you're using box pudding mix anyway, you're getting some not-as-healthy ingredients. Just sub out homemade whipped cream (my preference) or double the crap factor with cool whip. Either way, you're getting the nostalgia.
