My cousin's family did this. The trick is to really keep modifications down to a bare minimum, as it causes the price to skyrocket. In their case, they went with the standard kitchen and then put in their own changes later.

By code the laundry rooms on new homes have to either have a pan or drain in the floor that goes outside.

Floor plan looks pretty decent. Maybe you could change the upstairs sitting room to a home office and use the home office is a mudroom to keep the laundry downstairs? I'm not crazy about second-floor laundry rooms, with the possibility of leaks/flooding.

Shouldn't matter I have seen them on sloped lots the only difference is the walkout configuration
