We usually make some kind of French Toast Bread Pudding with challah or brioche (assembled the night before and baked in the morning) and serve with berries and chicken apple sausages. And always some sort of bubbly adult cocktail and sometimes bloody marys if we we weren't up all night wrapping gifts.

Welsh Cakes -- a cross between biscuits and pancakes with a flavoring of nutmeg.

Growing up Christmas morning breakfast was cold cereal, juice, egg nog, and I suppose coffee. And a loaf of Stolen. The Stolen always looked so pretty, but blech! But we got to use my great grandmother's Christmas glasses and the fancy china, so it was still special.

Now we do either a breakfast casserole or a quiche, plus a kringle. If you use a store-bought crust, a quiche is pretty quick to throw together.

If your family likes oatmeal, you could do steel cut oats in a crock pot or rice cooker overnight. Add fruit and seasoning (apples, raisins, cinnamon, for example) to make it special.
