I use a skillet too, but it seems like the quesadilla maker would be so much simpler. I hate trying to flip them and have all the toppings flop everywhere.

I fiercely and passionately want a vitamix. Chances that Santa will deliver is pretty much zero.

I do think, however, that we would put a waffle iron to good use around here. Or a panini press.

We freeze them and then make "toaster waffles" during the week. They're not quite as good as they are the first day, but they're still a nice, low effort weekday breakfast.
