Oh, and I think the squash/tomato/pepper thing sounds nauseating. So if I'm the last person in line and there's no asparagus left, it's no veg for me.

If you really can't go back to the store, or have someone else pick some up, can't you at least make a salad?

If you're serving this all plated, I still think at least 5 would be nice. And even if it's just there for people to choose, the first people will put at least 5 on their plates and there won't be any left for the last people (unless there are some folks who hate asparagus, which just might be). I just don't think you can go wrong with having a little extra.

Yes, especially if you're having company--for each guest you could serve 3 spears of asparagus, a large piece of lettuce, 1 slice tomato, and perhaps one ounce of baked chicken with a glass of water?!

If you are plating the food, I think three is fine (although I personally think it is skimpy). If people are helping themselves, it will not be enough.

I also have a salad.

2 proteins, 1 starch, and 2 veg sides. Thats my usual formula for a dinner party and it always seems to work.
