Louisville is great - we did the whiskey trail, the children's museum, the Muhammad Ali museum (can't miss tbh, one of the top 5 museums I've been to in my life), and if you like baseball the Slugger museum is there too. Judging by the kids ages 5-13 walking around downtown with bats that was a hit for baseball-inclined families.

I think maybe people watched Ozark and thought "I didn't realize there was any pretty scenery there"? I grew up in Dallas and knew a couple of people who had family lake houses in Arkansas but other than the fleeting idea of how exciting it would be to find a diamond on the ground at the National Park I can't say that vacationing there ever crossed my mind.
That said, you can make a week-long trip to almost anywhere fun if you're in the right frame of mind. Just go somewhere to see it! We had a blast in Albuquerque when we went to the balloon festival (alas, not in the Spring); my daughter still talks about that trip.

More budget friendly: Road trip to St Louis with a stop in Indianapolis for the children’s museum on the way there. And stops in Kentucky and/or Nashville on the way home

Grand Targhee or Alaska for late-season skiing.
Kauai for surfing, snorkeling, hiking, and golf. Stay at One Hanalei if you want to splurge. Surf in Hanalei. Hike Kalalau and Waimea Canyon. Golf in Princeville.
Southern Utah for the national parks and outdoors - our favorite is Zion, and we love the town of Springdale—Moab for mountain biking and a day trip to Arches. St. George, Utah, is an underrated destination where you can stay for a week without getting bored. Road biking is unbeatable, and they have plenty of rentals, hiking in Snow Canyon, and go to whatever a mature theater is in town at Tuachan - the most beautiful outdoor venue. Lots of good golf around, too. Rent a boat or ATVs at Sand Hollow. Definitely don't stay in a hotel - too many good vrbo's - the Inn at Entrada has townhomes that are ideal for small families, and Arcadia development is good for larger families.
If you like baseball, spring training in the Scottsdale area is fun.
