Skirts or dresses, or else pants, are more likely to blend in than capris. But you're unlikely to be excluded from an historic or religious site because you're wearing capris.
In addition to dresses, I wore linen pants while there. They were warmer, and thus less comfortable, than a dress but still breathable.

sounds absolutely awful. my spouse and I spent nearly a month in Vietnam as empty nesters and did the entire thing ourselves. THAT'S how you travel.
