This chicken enchilada soup is a favorite in our house. All it entails is dumping some raw chicken and canned ingredients in a slow cooker (or instant pot), chopping an onion (or just use onion powder instead), and adding a few spices. I prefer to use frozen corn, which is just as easy. When it’s done, shred the chicken.

Other go-to easy meals:
- We typically do pasta with frozen meatballs once a week, or meatball subs (cook the meatballs in sauce, throw on some sub rolls, add provolone and broil to toast them). Add a bagged salad.
- fried rice made with leftover rice and protein from earlier in the week. Add frozen peas/carrots, crack a few eggs in there, and add soy sauce.
- sheet pan sausage, potatoes, peppers, onions.
- grilled cheese or ham/cheese in the oven (place a second sheet pan on top of the sandwiches to get the griddle effect) with box/can tomato soup.
- chef salad with whatever veggies and deli meat you have on hand.
