Big advantage is it's right near Lockheed Martin with high paying internships after Sophomore year. 15-20 hrs during class semesters, up to 40 hrs during summer.
If they get good grades and do decent work as an intern, they can walk into a a career job.
UCF is also near a research park with many computer and defense related sub-contractors, so internships are available there too.
Of course it's Florida, with it's 6 week abortion law (which is really 4 weeks). This is mainly a danger for miscarriage treatment. Have a plan to head to VA for women's reproductive healthcare. As of now, all birth control is still legal.
DC mindset in a nutshell. Lockheed weapons have killed far more than Floridas abortion law.

If the goal is a job in SV then SJSU, Santa Clara University, Cal Poly etc are really good.

The ABET is in general engineering versus a specialty area. Could there by any issues with that for later employment?

This is not the geekiest Engineering program. It's more suited for someone more interested in interdisciplinary exploration (Engineering with other STEM or non-STEM areas). Swat is a school reputed for it's rigorous academic standards and I don't see any issues in job prospects. Also the prospects for admission into elite grad programs is high.
