I don’t understand why every item must cater to his tastes. Make something he likes, add fettuccine Alfredo that you like also. Or make a main that you like more, but make enough sides that he likes so he can make a meal of that. I cook for 4, including me plus two eaters that are picky in different ways. Not everyone will like everything available, but everyone can make a meal from what they like.
