If you are heading to Europe in July, do the easier thing and go to Quebec. You won't need 8 days in Quebec City, so visit Montreal. Montreal is amazing.

I would go for it. Particularly if it would be more of an outdoorsy vacay instead of a culture vulture tour. Being outside will reset your clock.

Hard disagree. NP. Italy in summer is not a walk in the park depending on where you stay how you arrive. Italy is amazing - one of my fave destinations but I would most certainly not call it easy.
QC is as close to European scenery as you get w/o going there. Cafes, shopping, very quaint. Yes, combine w Montreal old town and it's a lovely easy outing in July. Europe is NEVER easy. It's lovely and beautiful and always welcomed as someone who goes often but no. Not in the least easy v to staying on the continent!
I love Canada, but you’ll struggle to fill a week in Montreal and Quebec, ultimately feeling bored and kicking yourself for not opting to make the trip to Italy. Just go to Italy.

I did a six day trip with my adult daughter to Europe right after Thanksgiving. That was great and you will enjoy the time together, wherever you choose.
I agree with letting your DC choose the destination and plan activities, including some separate time for each of you.
I do worry that most of Europe is too crowded and too hot during summer months, except Scandinavia, but I don’t know the Dolomites.

Not in Bolzano. The hotel Stadt Hotel Città is absolutely lovely. I’d recover from jet lag there.
