Probably no religious believers realized that its roots are based on a made up set of fictional stories. They think they're special.
I think writing Jedi is merely a way of saying that the person believes that "forces for good" and "forces for evil" both exist.
(To me the holocaust at least was an existence proof that Forces for Evil do exist.)
