Tonight we had a shepherds pie thing (with lots of veggies thrown in) but instead of mashed potatoes, the potatoes are thin sliced on the mandolin and basted with butter and salt. Roasted broccoli as a side.

Last night made a chicken and leek gnocchi bake with cheese.

We had leftover chicken curry tonight. Dd said it was even better the second night. Tomorrow, I’m doing a salmon and green beans tray-bake.

And mushroom risotto.

I truly did not know people eat cornish hens. I thought that was like an 1800s thing.

It is a small and delicious bird and cooks very fast. Very easy meal and presentation is impressive and wonderful.
Try it. Foolproof recipe.

One adult with a big appetite can easily eat one bird but we usually split two birds between 2 adults and 2 kids, with other sides and starch.

So like a personal chicken! Thank you for your thoughtful response. I did not mean to respond to abruptly! We just didn’t eat these where I grew up.

Not the poster you're responding to, but we often had these in our family either for Sunday dinner or holidays/special occasions. It's a sweet story and sort of ties to your "old-timey" reference but my mom (who grew up poor in the country) was nannying for a family with more money "in town" in the 1950s. She saw Cornish game hens in a catalogue spread for a Christmas table, thought it looked so elegant, and said to herself "When I grow up and have money and my own house, that's what I'm going to serve" so she often did once she was in a position to. They are indeed visually impressive and wonderful.

I made this. And to the writer from a different post asking if people cook before work. I made this while I got ready up until adding the coconut milk. I also add spinach to it
Served with rice, salad and roasted broccoli
Makes for good lunch leftovers.

Patricia Wells has a lamb curry with yogurt and apples. Made it with shanks so they collapse in with the grated apple and onion. My house smells amazing!
