We had honey-mustard salmon and roasted broccoli last night, tonight we’re having egg roll in a bowl. Also on the menu for this week are turkey chili, baked chicken parmesan and spicy dumpling soup. Reading this, we need more veggie centered meals next week.

Monday--Zuppa Toscana with garlic bread (it was just me this night)
Tuesday--leftover soup, kids had turkey burgers, pretzels, crudite, and fruit
Wednesday--butter chicken, rice, carrots
Thursday--pasta with meat sauce (made with gr turkey) and salad
Friday--just me again, probably leftover pasta

Salmon and potatoes. Tofu and eggplant. Pasta and broccoli. Lemon chickpeas and zucchini.

I cook mon-thurs. Take out Friday. Wing it over the weekend which ends up being leftovers, something simple, or go out.

Turkey burgers, Caesar salad, couscous

Roasted chicken, egg noodles, roasted brussel sprouts

Chicken enchiladas with leftover chicken (we always make two roast chickens at once)

Do you have a good recipe for red curry salmon and shrimp? My DS used to order that all the time at our local Thai restaurant which closed years ago. I tried once to replicate it, and the curry was way too sweet.


This basic recipe for red curry (using jarred curry paste) but only put in salmon, shrimp and green beans. It calls for 1 Tbl sugar, but I put half that in. https://www.recipetineats.com/thai-red-curry-with-chicken/

Get a rice cooker, it is a gamechanger. We eat enough rice that it's worth it to have one.


+1 also, they do have frozen jasmine rice in Trader Joe’s, which is great for a quick last minute serving

I only cook one night a week as my husband is the main cook, but I am doing a NYT recipe for pasta with beans, sausage, and greens.

Chicken marsala meatballs and salad (will eat 2 days)
Vegetable soup with tortellini
Turkish cheese pie (for a potluck so there will be other stuff)

Also have leftover salmon, lots of bell peppers and cauliflower, and pizza ingredients. So we'll see where we are later in the week.
